Say hello to Tori Wesszer's Spicy Mango Chicken Bowl – a Tasty and Fresh Recipe.

No bland bites here! Imagine juicy chicken (or tofu, fish or prawns if you prefer) jazzed up with a mix of spices and our zesty Hot Mango Spicy Pepper Spread. It's a flavour party. Add any toppings or accompaniments you like, whatever's local or in season, or follow Tori's recipe to create her original dish.

The Recipe: Spicy Mango Chicken (or Tofu!) Rice Bowls

Ingredients:

  • 2 boneless skinless chicken breasts or a block of firm tofu, cubed, your fish of choice (rockfish, cod or halibut would be great here), or prawns
  • ¼ cup all-purpose flour
  • 2 tablespoons cornstarch
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1/8 teaspoon salt & pepper
  • 2 eggs (for the chicken or fish version) or ¼ cup of your go-to plant-based milk (for tofu, or you can also skip the eggs for a fish or prawn version)
  • 1 cup Panko Japanese style bread crumbs
  • 1 tablespoon oil
  • 1 jar (270mL) SaltSpring Kitchen Co. Hot Mango Spicy Pepper Spread (or less if you prefer it less saucy, and depending on the size and amount of your proteins)
  • 2 cups cooked rice
  • Toppings: Mango salsa, cucumber, avocado, shredded lettuce, edamame, sesame seeds, pickled red onions

Instructions:

  1. Mix flour, cornstarch, garlic powder, onion powder, salt, and pepper in a bowl.
  2. Beat eggs (for chicken) or pour plant-based milk (for tofu) into another bowl.
  3. Combine panko and oil in a third bowl.
  4. Coat chicken (or tofu) in the flour mix, egg (or plant-based milk), and panko. Set aside.
  5. Air fry chicken (or tofu) at 360°F for 9-10 mins or bake at 400°F for 12-14 mins.
  6. Warm the Hot Mango Spicy Spread and toss it with your cooked protein.
  7. Bowl time! Rice at the base, toppings on top, and you're good to go.

Note:

  • Get creative with toppings. Use seasonal favourites.
  • Like a bit more heat? Add a sprinkle of chilli flakes, a SaltSpring Kitchen Co. hot sauce, or any remaining Hot Mango Spicy Pepper Spread.
