500 grams Cleaned baby spinach, about 6 large handfuls

3-4 large, Ripe peaches, cut into slices

1 Cucumber, sliced

1/4 Medium sized red onion, sliced thinly

2 Carrots grated

Pinch of coarse sea salt
Directions
- Place all of the ingredients for the dressing into a large mason jar, seal and shake vigorously for at least 1 minute. Alternatively, you can use an immersion blender or smoothie blender to whip this up.
- Place all of the salad ingredients into a large bowl and toss together. Pour a quarter cup of dressing onto the salad and toss again. Serve immediately with extra dressing on the side.
Recipe Note
Extra dressing can be stored in sealed mason jar in the refrigerator for up to 10 days.
