Ingredients

2 cups extra-sharp Cheddar cheese, grated
1/3 cup good quality mayonnaise
1/2 cup jarred pimento (or other roasted red peppers), finely diced
1/4 cup SaltSpring Kitchen Co. Spicy Tomato Savoury Spread
1 tbsp. freshly squeezed lemon juice
Pinch freshly cracked black pepper

Directions

Mix all of the ingredients together in a large bowl until well blended.
Cover the bowl with kitchen wrap and place in the refrigerator for at least 30 minutes and up to overnight before serving: the longer it sits the more the flavours meld.
Serve with crackers as an appetizer, or use as a sandwich spread alone or with good quality ham. Store covered in the fridge for up to one week.
